Homemade Zucchini Bread

This recipe makes two loaves. You can eat both now, or wrap one and freeze for later.
Ingredients
  • 3 eggs (fresh, free-range, local eggs work best, ahem.)
  • 3 cups flour
  • 2 cups shredded zucchini
  • 1 cup vegetable oil
  • 2 cups sugar
  • 3 tsp vanilla
  • 1 tsp salt
  • 1 tsp baking soda
  • 3 tsp cinnamon
  • ½ tsp baking powder
  • ½ - 1 cup Nuts (optional)
Instructions
  1. Shred your zucchini to a fine pulp.
  2. Mix all ingredients well.
  3. Fill two greased loaf pans ¾ full.
  4. Bake at 325 degrees for 1 hour or until a toothpick comes our clean.
  5. Cool for about 15 minutes and then remove and finish cooling on a wire rack.
